It's all about the fresh.

We don't own a freezer or can opener.

Yes, you read that right. We serve no canned, frozen or pre-cooked foods shipped from some huge distribution plant. We believe that freshness is the key to great flavor, so every ingredient in our burrito fillings, salsas and sides is made from scratch right in the kitchen of each Cilantro restaurant. Read on for the juicy details:

Slice and Dice

Salsas, salads and sides start with fresh, whole tomatoes, onions, peppers, and jalapenos that we chop up each day. Then we add diced herbs and other spices and flavorings to make our unique salsas and sides. We do so much slicing and dicing that we change out the knives in our kitchens every week for sharpening!

Guacamole Love

Walk into any Cilantro kitchen and you'll see hundreds of Hass avocados everywhere, wrapped in newspaper, slowly ripening. When the avocados reach dark, soft perfection, we puree them with fresh jalapeno, onions and lime to make Cilantro's smooth, spicy guacamole.

Veggie and the Beans

While many restaurants cook their beans with beef stock or bacon, our beans are 100% vegetarian. We start with raw pinto or black beans, rinsed and soaked overnight, then we simmer them with fresh vegetables and spices to give them that Cilantro flavor.

Sizzle and Chips

We make our taco chips from scratch, starting with fresh corn tortillas that we slice into triangles and deep fry in non-hydrogenated soy oil. Then we sprinkle them with fresh squeezed lime juice while they're still so hot you can hear the lime juice sizzle and sear!
